Cucumber & Gin Cooler Cocktail

Looking for a delicious, simple to make summer cocktail that you can make time and time again? That everyone will love? This Cucumber Cooler will do JUST that! *insert alll the heart eyes here* This drink is so refreshing and delicious, not to mention it's pretty too. ;) This is one of my favorite drinks for a hot day and my girlfriends always love it! Since the weather's heating up and the pools are opening, get a head start on a pool party this season and serve this - it'll be a huge hit!

Ingredients

Makes one drink

1 1/2 oz. gin (one shot/jigger)
1 lime wedge, plus extra for garnishing
3-4 cubes of ice
4 thin slices of cucumber
Club soda
1/2 oz. cucumber juice 1 mint leaf for garnishing

Get some cute glasses out and fill it with ice and the shot of gin. Then line the sides of the glass with the cucumber slices.

Squeeze the lime wedge into the glass (to taste - no wrong amount!) and fill the remainder of the glass with club soda and cucumber juice. For the cucumber juice, use an additional cucumber and muddle it. It'll give just the right amount of extra juice and gives the drink the perfect taste! This is optional to add but I like this drink a lot better with that extra juice flavor.

Add a mint leaf and slice of lime to garnish and enjoy!

This drink is so refreshing and delicious! Another addition to consider is Limoncello - add about 1/2 oz. when you add in the gin and mix it well. I know lemon isn't everyone's favorite, but Limoncello is probably the most refreshing liqueur out there, and that means it doesn't count right?! Hah!
